
Imperial Crab
Number of Servings: 6
Ingredients:
1 lb crabmeat
2 Tbsp butter
2 Tbsp capers
1 onion chopped fine
1 1/2 cups of cream
2 egg yolks
2 Tbsp flour
1 Tbsp fresh parsley chopped
1 tsp paprika
Cracked pepper, salt
bread crumbs
Instructions:
Melt butter, sauté chopped onion. Add flour stirring constantly until smooth. Blend egg yolks with cream; stir in slowly until thick about five minutes. Add crabmeat and continue cooking for 10 minutes. Remove from heat and add seasonings. Fill four crab shells or ramekins and sprinkle bread crumbs on top, dot with small pieces of butter. Bake at 350. Bake for 30 minutes until brown.
