Lobster Pizza

Number of Servings: 1 as an entrée or 2-3 as an appetizer

Ingredients:
1-9 inch Pita Crust or pre cooked pizza crust
2 Tbsp Roasted Garlic paste
1/4cup Heavy Whipping Cream
1/4 Cup Shredded Monterey Jack Cheese
1 Tbsp Shredded Parmesan
2 -3 oz Lobster Meat (cooked and diced)
1/8 Cup Button Mushrooms, sliced thin
1/8 Cup Shitake Mushrooms, sliced thin
1/4 Cup Roma Tomatoes, diced
Pinch Kosher Salt
Pinch Fresh Cracked Black Pepper
2 Tsp Italian Parsley, coarse
1 Tbsp Fresh Basil, julienne

Instructions:
1. Place pita, or desired dough on a pizza pan
2. Smashed roasted garlic with fork. Add heavy cream, salt and pepper and whisk until blended.
3. Sautee button and shitake mushrooms with a splash of vegetable oil. Drain and reserve.
4. Place sauce on the crust and spread to the edge of the crust.
5. Then spread lobster meat evenly to edge of the crust, then add the jack cheese (spreading evenly to edge of crust) followed by parmesan cheese, sautéed mushrooms, tomatoes, salt and pepper
6. Place in 400 degree oven until the cheese is golden brown. Approx. 6-8 minutes
7. Remove from oven and cut into desired slices.
8. Top with fresh basil and Italian parsley.

To roast garlic place one whole bulb of garlic, rubbed with olive oil on a foil sheet, wrap and bake at 350 degrees for 35-45 minutes until soft and golden, scoop out garlic with spoon, reserve.
