Recipes for Shrimp

Ceviche Recipe

Number of Servings: 4

Ingredients:
1 lb of Peeled Shrimp
Juice of 8 limes
Juice of 1 orange
1 onion (chopped)
3 tablespoons Extra Virgin Olive Oil
4 tablespoons ketchup
Parsley
Salt & Pepper (to taste)
Hot Sauce (to taste)

Instructions:
Boil water (1 teaspoon salt)
Cut shrimp into bite size pieces
When water is boiling (not before), introduce shrimp into pot
Remove the shrimp from the water immediately as soon as the water starts to boil again
Strain the water used to boil the shrimp and place one cup of this water into a mixing bowl
Add the ingredients listed above, as well as cooked shrimp, into the bowl
Place bowl in refrigerator and let sit for 2 hours
Serve chilled
