Bloody Mary Shrimp Cocktail

Preparation Time: Approx. 35 minutes

1/2 lbs. medium cooked shrimp, peeled and deveined
3/4 cup celery, thinly sliced
1/2 cup scallions, thinly sliced
1/2 cup cucumber, peeled, deseeded and finely chopped
2 cups tomato juice
1/4 cup freshly squeezed lemon juice
1/2 tbsp. prepared horseradish or to taste
1 tsp. Worcestershire sauce
1 tsp. ground black pepper
1/2 tsp. sea salt
1/2 cup top shelf vodka

Combine first four ingredients in a bowl and set aside. In a pitcher, combine remaining ingredients and stir. Distribute shrimp mixture into individual martini glasses and pour in bloody mary mixture. Garnish with celery and lemon slices and serve chilled.
