A member of the cod family, Alaska pollock is one of the most abundant and versatile fish in the world. Alaska pollock has a mild taste with a somewhat higher oil content than other whitefish species. It is an excellent source of protein, as it is low in carbohydrates and fat.
Oncorhynchus nerka
Harvested in the cold clear waters of Alaska, sockeye salmon is noted for the distinct, deep red color of its meat. This color remains throughout cooking, which definitely makes an impressive dinner presentation. Sockeye has a strong but not fishy flavor. It is also an excellent source of protein and Vitamin D.

Prized for its snow-white, pearlescent flesh and gentle but distinctive flavor, cod has long been the fish of choice for consumers of the world. In fact, it is the benchmark by which most other whitefish is compared. Pacific cod has a mild, savory flavor profile accompanied by firm, chunky flakes.
Oncorhynchus keta
Caught throughout the Pacific Northwest, Keta is an extremely firm textured and high quality salmon. It has less oil content than sockeye or king salmon, which in turn gives it a lighter color and flavor. In fact, many people prefer Keta to other “fattier” salmon.
