Whiskey Spicy Cedar Plank Salmon

Ingredients:

  • 1 to 1 ½ lbs just fish sockeye fillets “skin on”
  • 1 tsp kosher salt
  • ½ tsp white pepper
  • 1/8 tsp cayenne pepper
  • 4oz whiskey/8oz water mixed
  • 4 cedar planks (4”x 6”)

Spicy salmon sauce:

  • 3 tbsp. mayonnaise
  • ½ tsp old bay
  • 1 tsp franks hot sauce
  • 1 tbsp. brown sugar

 

Instructions:

  1. Soak the cedar planks for 1 to 2 hours in the water and whiskey mixture
  2. In a small bowl, combine spicy salmon sauce ingredients, mix well and set aside.
  3. In another bowl, combine salmon rub ingredients. Sprinkle evenly on top of salmon fillets.  Allow to salmon to sit with rub while heating the grill
  4. Heat grill to medium high heat
  5. When grill is ready place remove cedar planks from soaking solution and place salmon on planks, then place on direct heat.
  6. Close the lid and allow fish to cook for 5 minutes. Open and baste with spicy salmon sauce.  Close and cook and additional 3 minutes
  7. Baste again, applying a thick coat. Close for another 2 minutes
  8. Open and top with lemon slices, closing for another 2 minutes or until salmon has reached an internal temperature of 145f for medium
  9. Remove and serve immediately
