Fried Shrimp Po Boy

Serves: 4
Total Time: 15 minutes

 

Ingredients:

  • 1 pound of Golden Harvest 16/20 panko breaded round shrimp
  • Peanut oil for frying
  • ½ head of iceberg lettuce
  • 3 beefsteak tomatoes, sliced about ¼ inch thick
  • 4 – 6 inch hoagie rolls

 

Remoulade:

  • ¼ cup Cajun mustard
  • 1 ¼ cups mayonnaise
  • 2 teaspoons horseradish
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Tabasco
  • 1 tablespoon minced garlic
  • 1 tablespoon sweet paprika
  • 2 teaspoons Cajun seasoning

 

Instructions:

  1. Mix all the ingredients for the remoulade together and let it sit for 30 minutes
  2. Heat oil to 350f and fry shrimp for 2 ½ to 3 minutes then set aside
  3. Slice hoagie rolls almost all the way then smear the remoulade on top and bottom
  4. Layer shredded lettuce on the bottom of the sandwich, then arrange shrimp on top. Lay 3 tp 4 slices of tomato on the shrimp and press the top of the bread down onto the bottom compressing the sandwich a little.
