22 Jul Grilled Cod Chimichurri

Ingredients:
- 1 to 1 ½ lbs Just Fish cod portions
- 2 tbsp. extra virgin olive oil
- 1 tbsp. sea salt
- ½ tbsp. cracked black pepper
For the chimichurri:
- ¼ cup coarsely chopped parsley
- 3 tablespoons red wine vinegar
- 2 ½ tbsp. minced garlic
- 2 tbsp. oregano leaves
- 2 tsp crushed red pepper
- Fresh ground pepper and sea salt to taste
- ½ cup extra virgin olive oil
Instruction:
For the chimichurri:
In a food processor, combine the parsley, vinegar, garlic, oregano and crushed red pepper. Process until smooth; season with salt and pepper. Transfer the sauce to a bowl and pour the olive oil over the mixture. Let stand for at least 20 minutes
For the grilled cod:
- Heat grill to medium high heat
- Brush the just fish cod portions on both sides with extra virgin olive oil and sprinkle with sea salt and cracked pepper
- Using remaining olive oil on a paper towel to brush the grill grate then place just fish cod portions on grill
- Let sear for about 6 minutes or until the fish can easily lift off the grill with a spatula
- Flip cod and cover with lid for another 4 to 5 minutes. Check the thickest part of the fish by pulling back some of the flesh to see inside the meat looking for a nice white interior. Baste cod with the chimichurri sauce then pull off and let sit for about 3 minutes and add more chimichurri to top the cod then serve.
