Grilled Cod Chimichurri

Ingredients:

  • 1 to 1 ½ lbs Just Fish cod portions
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. sea salt
  • ½ tbsp. cracked black pepper

For the chimichurri:

  • ¼ cup coarsely chopped parsley
  • 3 tablespoons red wine vinegar
  • 2 ½ tbsp. minced garlic
  • 2 tbsp. oregano leaves
  • 2 tsp crushed red pepper
  • Fresh ground pepper and sea salt to taste
  • ½ cup extra virgin olive oil

 

Instruction:

For the chimichurri:

In a food processor, combine the parsley, vinegar, garlic, oregano and crushed red pepper. Process until smooth; season with salt and pepper. Transfer the sauce to a bowl and pour the olive oil over the mixture. Let stand for at least 20 minutes

For the grilled cod:

  1. Heat grill to medium high heat
  2. Brush the just fish cod portions on both sides with extra virgin olive oil and sprinkle with sea salt and cracked pepper
  3. Using remaining olive oil on a paper towel to brush the grill grate then place just fish cod portions on grill
  4. Let sear for about 6 minutes or until the fish can easily lift off the grill with a spatula
  5. Flip cod and cover with lid for another 4 to 5 minutes. Check the thickest part of the fish by pulling back some of the flesh to see inside the meat looking for a nice white interior.  Baste cod with the chimichurri sauce then pull off and let sit for about 3 minutes and add more chimichurri to top the cod then serve.
