30 Jan Hearty Seafood Chowder

Total Time: 40 minutes
INGREDIENTS:
- 3 tablespoons plus ¼ cup butter divided
- 1 lb fresh mushrooms sliced
- 1/3 cup all purpose flour
- 1 teaspoon sea salt
- 1/8 teaspoon ground black pepper
- 1 lb Just Fish cod fillets cut into 1 inch pieces
- 1 lb Sail brand raw 21/25 peeled, deveined, tail off shrimp
- 2 cups frozen peas
- ¾ cup shredded cheddar cheese
- 1 cup lump crab meat drained
- 4 oz diced pimientos drained
- 1 teaspoon smoked paprika
INSTRUCTIONS:
- Over medium heat in a 6 quart stockpot heat 3 tablespoons of butter then add mushrooms, cook and stir until tender, 8-10 minutes. Then remove from pot
- Heat remaining butter over medium heat in the same pot then stir in flour, salt and pepper until smooth. Gradually whisk in cream and milk, bring to a boil stirring constantly. Cook and stir until thickened about 2-3 minutes
- Stir in cod, shrimp, peas, and sautéed mushrooms cooking until fish just begins to flake easily and shrimp turn pink, about 5-7 minutes. Add cheese, crab and pimientos stirring gently until cheese is melted. Sprinkle with paprika then serve
