06 Jan Seafood Pie
Total Time: 45 Minutes
- 1 pound peeled, boiled and mashed potatoes
- ½ teaspoon of saffron
- 3 tablespoon butter
- 9 ½ ounces of milk
- 8 ounces of Just Fish brand wild-caught cod
- 4 ounces Sail Brand 31/40 peeled, deveined and tail-off shrimp
- 2 teaspoon plain flour
- 2 tablespoon chopped chives
Preheat oven to 350F then beat potatoes with the saffron milk and 1 tablespoon of butter. Salt and pepper to taste
Pour the milk in a pan and place fish fillets on top, then bring it slowly to a boil. Then cover the pan and turn off the heat. Let sit for five minutes.
In another pan melt 1 tablespoon of butter and stir in flour. Cook for one minute then stir in the milk from the fish pan. Constantly stir until thick and smooth.
Stir half the sauce and the chives gently into the fish letting it fall into large flakes, add more if necessary then add the shrimp
Scrape mixture into an ovenproof dish then top the potatoes and dab the last of the butter on top. Bake 45 minutes or until browned.
