Shrimp Cakes with a Citrus Aioli

Shrimp Cakes

1 lb Sail 26/30 Shrimp P&D, Tail off (Defrosted) 

1 ½ cup Shredded Mozzarella (about 4 oz)

1 Egg, large, Scrambled

1/4 cup Mayonnaise    

2 TBSP Parsley, fresh, finely chopped

½ TSP Sea Salt  

1/8 TSP Black Pepper 

¼ cup All Purpose Flour (or Gluten Free) 

2 TBSP Olive Oil  


Chop the shrimp to about 6-8 pieces and add to a medium size bowl. Combine all of the ingredients in the bowl except flour and olive oil. Add flour and stir until incorporated.  

In a large skillet over medium heat, add olive oil. Scoop large spoonful’s of shrimp batter into pan, about 3 inches in diameter and ½ inch wide. Cook for about 2 minutes per side until golden brown.  



Citrus Aioli 

½ cup Mayonnaise 

1 TSP Lemon, Zest

1 TBSP Lemon Juice

1 Clove Garlic, minced 

¼ TSP Sea Salt 

Combine all ingredients, serve on side with shrimp cakes.
