Shrimp Flat Bread with Spinach and Peppers

¼ red pepper finely diced
¼ Red Onion thinly sliced
2 cloves of garlic thinly sliced
1.5 cups spinach
3 Tbs Shredded Mozarella
2 Tbs Extra virgin Olive Oil
1 Flat Bread
1 lb 16/20 P&D Tail Off

Saute, garlic, red onions, peppers and spinach with olive oil and and cook 1 to 2 minutes. Remove and set aside. Saute cleaned deveined, and tails removed large shrimp in olive oil and garlic until pink. Sprinkle shredded mozzarella on flat bread. Top with spinach mixture and shrimp. Broil until cheese is melted. Cut into squares.
